  • 2.5 lbs Russet or Yellow Potatoes
  • 1 Yellow Onion, Diced
  • 10.5 oz Can of Cream of Mushroom Soup
  • 2 Cups Freshly Grated Cheese (like Colby Jack)
  • 1 oz Packet Lipton Onion Soup Mix
  • Crispy Fried Onions for topping
  • 56 Garlic Cloves, minced
  • 2 tbsp Tomato Paste
  • 1 tbsp salt-free garlic herb seasoning
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Beef Bouillon + 1/2 cup of water
  • 2 tbsp Olive Oil
  • 1/2 Cup Milk
  • 2 tsp Black Pepper

Instructions

  1. In a skillet over medium heat, brown the ground beef with diced onions and minced garlic until thoroughly cooked. Drain excess grease.
  2. Add tomato paste, garlic herb seasoning, Worcestershire sauce, bouillon mixed with water; let simmer on low heat.
  3. Microwave or parboil the chopped potatoes until slightly tender. Toss with olive oil and onion soup mix in a baking dish.
  4. Layer the beef mixture evenly over the seasoned potatoes.
  5. Whisk together cream of mushroom soup with milk and black pepper; pour over the casserole.
  6. Cover and bake at 375°F for about 35 minutes. Remove foil, top with cheese and crispy fried onions, then bake uncovered for an additional 7–10 minutes until golden brown.
