Ingredients
For the Garlic Butter:
- 4 tablespoons unsalted butter – Softened for easy spreading.
- 2 cloves garlic, minced – Adds rich, garlicky goodness.
- 1 tablespoon fresh parsley, chopped – For a fresh, herby kick.
- 1/2 teaspoon salt – Enhances all the flavors.
For the Sandwich:
- 8 slices of thick-cut bread (like sourdough or Texas toast) – Sturdy enough for all that cheesy goodness.
- 1 cup cooked shrimp, chopped – Juicy, flavorful bites in every sandwich.
- 1 cup mozzarella cheese, shredded – For that perfect melty stretch.
- 1/2 cup Parmesan cheese, grated – Adds a salty, nutty depth.
- 1/2 teaspoon red pepper flakes (optional) – For a little heat.
- 1 tablespoon olive oil – Helps crisp up the shrimp.
Instructions
Step 1: Make the Garlic Butter
- In a small bowl, mix butter, minced garlic, parsley, and salt until well combined.
- Set aside for spreading on the bread.
Step 2: Cook the Shrimp
- Heat olive oil in a skillet over medium heat.
- Add chopped shrimp and cook for 2-3 minutes, just until warmed through.
- Remove from heat and set aside.
Step 3: Assemble the Sandwiches
- Spread garlic butter on one side of each bread slice.
- On the unbuttered side, layer mozzarella, shrimp, Parmesan, and red pepper flakes (if using).
- Top with another slice of bread, buttered side facing out.
Step 4: Grill to Perfection
- Heat a skillet or griddle over medium-low heat.
- Place the sandwiches in the skillet and cook for 3-4 minutes per side, until golden brown and crispy.
- Press down slightly with a spatula to help the cheese melt.
Step 5: Serve & Enjoy!
- Remove from heat and let the sandwiches cool for 1-2 minutes before slicing.
- Serve with marinara sauce for dipping or a side of tomato soup for the ultimate comfort meal.
Notes
- Use Good Bread – Thick slices hold up better to all the fillings.
- Shred Your Own Cheese – It melts smoother than pre-shredded cheese.
- Low and Slow is Key – Cooking on medium-low heat ensures crispy bread and melty cheese.
- Don’t Overcook the Shrimp – Since they’re already cooked, just warm them up.
