  • 1 cup jasmine rice
  • 2 cups water
  • ½ cup jalapeño (finely diced)
  • 2 tbsp butter
  • 3 cups shredded cheddar cheese
  • ¾ cup milk
  • ¼ tsp ground black pepper
  • 1 ½ tsp kosher salt
  • 1 tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp dry mustard powder

Instructions

  1. Rinse jasmine rice under cold water until clear. In a medium pot, combine rinsed rice and 2 cups of water. Boil over medium-high heat, then reduce to low and simmer covered for 15-18 minutes. Let sit for an additional 5 minutes off heat.
  2. In another saucepan, melt butter over medium heat. Sauté diced jalapeños until softened (3-4 minutes). Stir in milk and warm slightly. Gradually add shredded cheddar cheese while stirring until melted.
  3. Mix the cooked rice into the cheese sauce until evenly coated. Season with kosher salt, black pepper, onion powder, garlic powder, and dry mustard powder.
