Description

There’s nothing better than Cheesy Mashed Potato Puffs—crispy on the outside, fluffy on the inside, and loaded with melty cheese. These bite-sized potato treats are the perfect way to use up leftover mashed potatoes and make a fantastic appetizer, side dish, or snack!

Ingredients

  • 2 cups mashed potatoes (leftovers work great!)
  • 2 large eggs
  • ½ cup shredded cheddar cheese (or mozzarella)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped chives (or green onions)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional, for extra flavor)
  • ¼ cup breadcrumbs (for a firmer texture)

For Garnish (Optional):

  • Extra chives or green onions
  • Sour cream for dipping

Instructions

Step 1: Preheat the Oven & Prepare the Pan

  1. Preheat oven to 400°F (200°C).
  2. Grease a muffin tin with nonstick spray or butter.

Step 2: Mix the Ingredients

  1. In a large bowl, whisk eggs until smooth.
  2. Add mashed potatoes, cheddar cheese, Parmesan, chives, salt, black pepper, garlic powder, and breadcrumbs. Mix until well combined.

Step 3: Fill the Muffin Tin

  1. Scoop mixture into the prepared muffin tin, filling each cup ¾ full.
  2. Sprinkle extra cheese on top if desired.

Step 4: Bake Until Golden

  1. Bake for 20-25 minutes, or until golden brown and slightly crispy on top.
  2. Let cool for 5 minutes, then carefully remove from the muffin tin.

Step 5: Serve & Enjoy!

  1. Garnish with extra chives and serve with sour cream or dipping sauce.

Notes

Use Cold Mashed Potatoes – Helps the puffs hold their shape better.
For Extra Flavor – Add a pinch of onion powder or smoked paprika.
Make It Even Better – Mix in crispy bacon bits for extra deliciousness.
For a Healthier Twist – Use Greek yogurt instead of sour cream.
