Ingredients
- 2 cups mashed potatoes (leftovers work great!)
- 2 large eggs
- ½ cup shredded cheddar cheese (or mozzarella)
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped chives (or green onions)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder (optional, for extra flavor)
- ¼ cup breadcrumbs (for a firmer texture)
For Garnish (Optional):
- Extra chives or green onions
- Sour cream for dipping
Instructions
Step 1: Preheat the Oven & Prepare the Pan
- Preheat oven to 400°F (200°C).
- Grease a muffin tin with nonstick spray or butter.
Step 2: Mix the Ingredients
- In a large bowl, whisk eggs until smooth.
- Add mashed potatoes, cheddar cheese, Parmesan, chives, salt, black pepper, garlic powder, and breadcrumbs. Mix until well combined.
Step 3: Fill the Muffin Tin
- Scoop mixture into the prepared muffin tin, filling each cup ¾ full.
- Sprinkle extra cheese on top if desired.
Step 4: Bake Until Golden
- Bake for 20-25 minutes, or until golden brown and slightly crispy on top.
- Let cool for 5 minutes, then carefully remove from the muffin tin.
Step 5: Serve & Enjoy!
- Garnish with extra chives and serve with sour cream or dipping sauce.
Notes
Use Cold Mashed Potatoes – Helps the puffs hold their shape better.
For Extra Flavor – Add a pinch of onion powder or smoked paprika.
Make It Even Better – Mix in crispy bacon bits for extra deliciousness.
For a Healthier Twist – Use Greek yogurt instead of sour cream.
