- Salt and black pepper, to taste
- 4 large eggs
- ¼ cup milk (for extra fluffiness)
- ½ cup shredded cheddar cheese (or your favorite cheese)
- 1 green onion, chopped (optional, for garnish)
- ¼ teaspoon paprika (optional, for extra flavor)

Instructions
Step 1: Cook the Potatoes
- Heat olive oil (or butter) in a large skillet over medium heat.
- Add diced potatoes, season with garlic powder, onion powder, salt, pepper, and paprika.
- Cook for 8-10 minutes, stirring occasionally, until potatoes are golden and tender.
Step 2: Scramble the Eggs
- In a bowl, whisk together eggs and milk until fully combined.
- Push the potatoes to one side of the skillet.
- Pour the eggs into the empty side of the pan and cook over low-medium heat, stirring gently until fluffy.
Step 3: Add Cheese & Combine
- Once the eggs are mostly set, stir everything together with the potatoes.
- Sprinkle shredded cheese on top and let it melt for 1-2 minutes.
Step 4: Garnish & Serve
- Remove from heat and top with chopped green onions.
- Serve warm with toast, avocado, or fresh fruit!
