  • 2 medium russet or Yukon gold potatoes, diced small
  • 1 tablespoon olive oil or butter
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • 4 large eggs
  • ¼ cup milk (for extra fluffiness)
  • ½ cup shredded cheddar cheese (or your favorite cheese)
  • 1 green onion, chopped (optional, for garnish)
  • ¼ teaspoon paprika (optional, for extra flavor)

Optional Add-Ins:

🥓 Cooked turkey bacon or chicken sausage
🌶 Diced bell peppers or jalapeños
🧅 Sautéed onions or mushrooms


Instructions

Step 1: Cook the Potatoes

  1. Heat olive oil (or butter) in a large skillet over medium heat.
  2. Add diced potatoes, season with garlic powder, onion powder, salt, pepper, and paprika.
  3. Cook for 8-10 minutes, stirring occasionally, until potatoes are golden and tender.

Step 2: Scramble the Eggs

  1. In a bowl, whisk together eggs and milk until fully combined.
  2. Push the potatoes to one side of the skillet.
  3. Pour the eggs into the empty side of the pan and cook over low-medium heat, stirring gently until fluffy.

Step 3: Add Cheese & Combine

  1. Once the eggs are mostly set, stir everything together with the potatoes.
  2. Sprinkle shredded cheese on top and let it melt for 1-2 minutes.

Step 4: Garnish & Serve

  1. Remove from heat and top with chopped green onions.
  2. Serve warm with toast, avocado, or fresh fruit!

Notes

Dice Potatoes Evenly – Ensures they cook at the same rate.
