Ingredients
For the Chicken & Potatoes:

1½ lbs boneless, skinless chicken thighs or breasts, cut into chunks

1 lb baby gold potatoes, halved

1 tbsp olive oil

1 tsp garlic powder
-
1 tsp paprika
-
½ tsp onion powder
-
½ tsp dried thyme

Salt and pepper to taste
For the Cheese Sauce:

1 tbsp butter
-
1 tbsp all-purpose flour
-
¾ cup milk (whole or 2%)

1 cup shredded cheddar cheese

¼ cup grated parmesan cheese

Salt and pepper to taste
For Garnish (Optional):

Chopped parsley or green onions

Crushed red pepper flakes
Instructions
Step 1: Cook the Potatoes
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add halved baby potatoes cut-side down.
Sprinkle with salt, pepper, and half of the garlic powder and paprika.
Cook for 6–8 minutes, flipping occasionally, until golden and fork-tender.
Transfer to a plate and set aside.
Step 2: Sear the Chicken
In the same skillet, add a little more oil if needed.
Add chicken chunks and season with the rest of the garlic powder, paprika, onion powder, thyme, salt, and pepper.
Cook 6–8 minutes, turning occasionally, until the chicken is browned and cooked through.
Return potatoes to the skillet and toss to combine.
Step 3: Make the Cheese Sauce
In a small saucepan over medium heat, melt the butter.
Whisk in the flour and cook for 1 minute.
Slowly whisk in the milk until smooth.
Bring to a gentle simmer and stir until thickened (2–3 minutes).
Remove from heat and stir in cheddar and parmesan until melted and smooth.
Season with salt and pepper to taste.
Step 4: Combine & Serve
Pour the cheese sauce over the chicken and potatoes in the skillet.
Gently toss or spoon to coat evenly.
Optional: Broil for 2–3 minutes for a golden cheese crust on top.
Garnish with chopped parsley, green onions, or red pepper flakes if desired.
Serve warm right from the skillet.
