Ingredients
- 2 lbs yellow potatoes (sliced)
- 14 oz package of smoked sausage (sliced)
- 1 yellow onion (diced)
- 4 oz freshly grated sharp cheddar cheese
- 1 tbsp chicken-flavored bouillon
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 tbsp neutral oil
- 2 tbsp turkey olive oil (or oil or butter)
- 1 tbsp all-purpose seasoning
Instructions
- Boil a large pot of water and stir in the chicken bouillon. Add the sliced potatoes and cook for 5 minutes until slightly tender. Drain and set aside.
- Heat 1 tbsp of oil in a skillet over medium heat. Add the sliced sausage and diced onion; cook until browned and onions are caramelized (6-8 minutes). Remove from skillet.
- In the same skillet, melt turkey olive oil, add drained potatoes, season with all-purpose seasoning, and cook for about 20 minutes until golden brown.
- Return the sausage and onions to the skillet, mix well, sprinkle cheddar cheese on top, cover with a lid until melted.
