  • 2 lbs yellow potatoes (sliced)
  • 14 oz package of smoked sausage (sliced)
  • 1 yellow onion (diced)
  • 4 oz freshly grated sharp cheddar cheese
  • 1 tbsp chicken-flavored bouillon
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tbsp neutral oil
  • 2 tbsp turkey olive oil (or oil or butter)
  • 1 tbsp all-purpose seasoning

Instructions

  1. Boil a large pot of water and stir in the chicken bouillon. Add the sliced potatoes and cook for 5 minutes until slightly tender. Drain and set aside.
  2. Heat 1 tbsp of oil in a skillet over medium heat. Add the sliced sausage and diced onion; cook until browned and onions are caramelized (6-8 minutes). Remove from skillet.
  3. In the same skillet, melt turkey olive oil, add drained potatoes, season with all-purpose seasoning, and cook for about 20 minutes until golden brown.
  4. Return the sausage and onions to the skillet, mix well, sprinkle cheddar cheese on top, cover with a lid until melted.
