- 1 Yellow Onion, Diced
- 1 tbsp Tomato Paste
- 1 packet Taco Seasoning
- 19 oz Can of Red Enchilada Sauce
- 10 oz Can of Rotel, Drained
- 19 oz Bag of Frozen Cheese Tortellini
- 8 oz Shredded Colby Jack Cheese
Instructions
- In a large skillet over medium heat, brown the ground beef with diced onion until fully cooked. Drain excess fat.
- Stir in tomato paste and cook for an additional 2-3 minutes.
- Add taco seasoning, enchilada sauce, and drained Rotel; mix well.
- Incorporate frozen cheese tortellini into the skillet and cover. Simmer for about 5-7 minutes until heated through.
- Top with shredded Colby Jack cheese and cover again until melted. Garnish with chopped green onions if desired.
