Description

Cheesy Taco Tortellini Skillet is a mouthwatering dish that seamlessly blends the bold flavors of tacos with creamy tortellini, all ready in just 20 minutes.


Ingredients

  • 1 lb Ground Beef
  • 1 Yellow Onion, Diced
  • 1 tbsp Tomato Paste
  • 1 packet Taco Seasoning
  • 19 oz Can of Red Enchilada Sauce
  • 10 oz Can of Rotel, Drained
  • 19 oz Bag of Frozen Cheese Tortellini
  • 8 oz Shredded Colby Jack Cheese

Instructions

  1. In a large skillet over medium heat, brown the ground beef with diced onion until fully cooked. Drain excess fat.
  2. Stir in tomato paste and cook for an additional 2-3 minutes.
  3. Add taco seasoning, enchilada sauce, and drained Rotel; mix well.
  4. Incorporate frozen cheese tortellini into the skillet and cover. Simmer for about 5-7 minutes until heated through.
  5. Top with shredded Colby Jack cheese and cover again until melted. Garnish with chopped green onions if desired.
