  • 2 cloves garlic (minced)
  • 3 cups enchilada sauce
  • Salt and ground black pepper
  • 2 boneless skinless chicken breasts
  • 2 cups shredded cheddar jack cheese
  • 8 flour tortillas
  • Cooking spray
  • ½ cup fresh cilantro (optional)

Instructions

  1. Preheat the oven to 425°F.
  2. In a deep skillet, heat the enchilada sauce and garlic until boiling. Season chicken with salt and pepper, then nestle into the sauce. Cover and cook on low for 15-20 minutes until fully cooked.
  3. Remove chicken, let it cool slightly, then shred using forks.
  4. In a mixing bowl, combine shredded chicken with ¾ cup reserved sauce and 1 cup cheese.
  5. Warm tortillas in the microwave to soften them. Spoon filling onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  6. Brush enchiladas with olive oil and bake uncovered for 8-10 minutes until golden brown.
  7. Pour remaining sauce over enchiladas, sprinkle with cheese, cover with foil, and bake for an additional 20 minutes at 400°F.
  8. Remove foil and bake another 5-10 minutes until cheese is bubbly and golden.
