For the Casserole:

  • 2 cups cooked chicken, shredded (rotisserie works great!)
  • 4 cups fresh spinach (or 1 cup frozen, thawed & drained)
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup heavy cream (or milk for a lighter version)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tablespoon olive oil (for sautéing)

Optional Toppings:

  • ¼ cup crushed crackers or breadcrumbs (for extra crunch)
  • 1 tablespoon chopped parsley (for garnish)

Instructions

Step 1: Preheat & Prepare

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with butter or cooking spray.

Step 2: Sauté the Spinach

  1. Heat olive oil in a skillet over medium heat.
  2. Add spinach and cook for 2-3 minutes, until wilted (if using fresh).
  3. Remove from heat and drain any excess liquid.

Step 3: Make the Cream Cheese Mixture

  1. In a large bowl, whisk together cream cheese, sour cream, heavy cream, garlic powder, onion powder, salt, black pepper, and Italian seasoning until smooth.

Step 4: Assemble the Casserole

  1. Add shredded chicken and sautéed spinach to the cream cheese mixture. Stir to coat.
  2. Transfer to the prepared baking dish and spread evenly.
  3. Sprinkle mozzarella and Parmesan cheese on top.

Step 5: Bake & Serve

  1. Bake uncovered for 20-25 minutes, until bubbly and golden brown.
  2. If using breadcrumbs or crackers, add them in the last 5 minutes of baking.
  3. Garnish with fresh parsley and serve hot!

Notes

  • Use Rotisserie Chicken – Saves time and adds flavor.
  • Don’t Skip the Seasoning – Helps balance the richness of the cheese.
  • For Extra Flavor – Add a pinch of red pepper flakes or a splash of hot sauce.
