For the Casserole:
- 2 cups cooked chicken, shredded (rotisserie works great!)
- 4 cups fresh spinach (or 1 cup frozen, thawed & drained)
- 8 oz cream cheese, softened
- ½ cup sour cream
- ½ cup heavy cream (or milk for a lighter version)
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tablespoon olive oil (for sautéing)
Optional Toppings:
- ¼ cup crushed crackers or breadcrumbs (for extra crunch)
- 1 tablespoon chopped parsley (for garnish)
Instructions
Step 1: Preheat & Prepare
- Preheat oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with butter or cooking spray.
Step 2: Sauté the Spinach
- Heat olive oil in a skillet over medium heat.
- Add spinach and cook for 2-3 minutes, until wilted (if using fresh).
- Remove from heat and drain any excess liquid.
Step 3: Make the Cream Cheese Mixture
- In a large bowl, whisk together cream cheese, sour cream, heavy cream, garlic powder, onion powder, salt, black pepper, and Italian seasoning until smooth.
Step 4: Assemble the Casserole
- Add shredded chicken and sautéed spinach to the cream cheese mixture. Stir to coat.
- Transfer to the prepared baking dish and spread evenly.
- Sprinkle mozzarella and Parmesan cheese on top.
Step 5: Bake & Serve
- Bake uncovered for 20-25 minutes, until bubbly and golden brown.
- If using breadcrumbs or crackers, add them in the last 5 minutes of baking.
- Garnish with fresh parsley and serve hot!
