  • 1.5 tsp garlic powder
  • 1.5 tsp dried Italian seasoning mix
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp crushed red pepper flakes (more or less to taste)
  • 3 Tbsp grated parmesan cheese
  • 1/2 cup mayonnaise
  • 1 Tbsp Dijon mustard
  • 2 garlic cloves
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp white grape juice vinegar
  • 1 lemon – juice only
  • 1 cup grated parmesan cheese
  • 1 tsp anchovy paste (or 2 anchovy fillets)
  • 1/81/4 tsp salt (to taste)
  • 1/81/4 tsp black pepper (to taste)
  • 1/3 cup olive oil
  • 4 large, burrito size tortillas (warmed)
  • 45 oz romaine lettuce leaves (sliced thin)
  • 1 cup shaved parmesan cheese
  • 1 cup croutons
  • 1/31/2 cup Caesar dressing (to taste)

Instructions

  1. Season chicken breasts with garlic powder, Italian seasoning, salt, and red pepper flakes.
  2. Cook chicken in a skillet over medium heat for about 6-7 minutes on each side until fully cooked. Slice thinly after resting.
  3. In a bowl, whisk together mayonnaise, Dijon mustard, minced garlic, vinegar, lemon juice, parmesan cheese, salt, pepper, and olive oil until smooth.
  4. Lay out tortillas and layer with lettuce, sliced chicken, shaved parmesan, and dressing. Add croutons if desired.
  5. Roll tightly and serve immediately.
