Ingredients
For the Chicken:
- 1 lb boneless, skinless chicken breasts, thinly sliced or chopped
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp crushed red pepper flakes (optional, for heat)
For the Sandwiches:
- 1 tbsp butter
- 1 small onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 4 slices provolone cheese (or cheese of choice)
- 4 hoagie rolls, sliced open
- Mayonnaise or garlic aioli (optional)
Instructions
1. Prep the Chicken:
- Slice or chop the chicken into thin strips.
- Toss with garlic powder, onion powder, paprika, salt, pepper, and red pepper flakes.
2. Cook the Peppers & Onions:
- Heat butter in a skillet over medium heat.
- Add onions and bell peppers and sauté for 4-5 minutes, until soft and slightly caramelized.
- Transfer to a plate and set aside.
3. Cook the Chicken:
- In the same skillet, add olive oil and seasoned chicken.
- Cook over medium-high heat for 5-7 minutes, stirring occasionally, until fully cooked.
4. Assemble the Sandwiches:
- Add the cooked chicken, peppers, and onions back into the skillet.
- Place cheese slices on top and cover with a lid for 1-2 minutes until melted.
5. Toast & Serve:
- Lightly toast the hoagie rolls in a dry pan or oven.
- Spread with mayo or garlic aioli, if using.
- Fill with the cheesy chicken mixture and serve hot!
Notes
Extra Flavor – Add Worcestershire sauce or a splash of hot sauce while cooking the chicken.
