  • 2 teaspoons Olive Oil
  • 2 Bell Peppers (sliced)
  • 1/2 cup Yellow Onion (diced)
  • 2 Boneless Chicken Breasts (diced)
  • 1 cup Heavy Whipping Cream
  • 2 cups Cheddar Cheese (shredded)
  • 1 packet Fajita Seasoning

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil. Add sliced bell peppers and diced onion; cook for 2–3 minutes until softened.
  3. Add diced chicken and fajita seasoning to the skillet; cook for about 7–8 minutes until chicken reaches an internal temperature of 165°F.
  4. Reduce heat to low, pour in heavy cream while whisking gently, then stir in shredded cheddar cheese until melted and smooth.
  5. Turn off heat, add cooked rotini pasta to the skillet, and toss everything together until well coated in the creamy sauce.
