Ingredients
For the Chicken:

4 boneless, skinless chicken breasts

For the Creamy Mushroom Sauce:

8 oz mushrooms, sliced (white or cremini)

2 tbsp all-purpose flour

1 cup chicken broth

1 cup whole milk or half-and-half

½ tsp garlic powder

½ tsp onion powder

For the Topping:

6 slices of mild cheese (like mozzarella, provolone, or gouda)

Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
Step 2: Dredge the Chicken
In a shallow bowl, mix flour, salt, and pepper. Dredge each chicken breast in the flour mixture until evenly coated.
Step 3: Brown the Chicken
In a large skillet, heat olive oil and butter over medium heat. Add the chicken breasts and sear for 2–3 minutes per side until golden brown (they don’t need to be fully cooked). Transfer the chicken to the prepared baking dish.
Step 4: Make the Mushroom Sauce
In the same skillet, melt 2 tbsp butter. Add the mushrooms and sauté for 4–5 minutes until they release their moisture and begin to brown. Add garlic and onion, cooking for another 2–3 minutes until softened.
Stir in 2 tbsp flour and cook for 1 minute, stirring constantly. Gradually whisk in the chicken broth and milk, bringing the mixture to a simmer. Add garlic powder, onion powder, paprika, and season with salt and pepper. Simmer for 3–5 minutes until the sauce thickens slightly.
Step 5: Assemble the Dish
Pour the creamy mushroom sauce evenly over the chicken breasts in the baking dish. Top each piece of chicken with a slice of cheese.
Step 6: Bake Until Bubbly
Cover loosely with foil and bake for 20 minutes. Remove the foil and bake for another 10–15 minutes, or until the cheese is golden and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
Step 7: Garnish and Serve
Remove from the oven, let rest for 5 minutes, then garnish with chopped parsley. Serve hot with your favorite sides.
