- 9 lasagna noodles (cooked al dente)
- 4 cups shredded rotisserie chicken
- 1 Tbsp olive oil
- 1 medium onion (finely chopped)
- 3 garlic cloves (minced)
- 4 Tbsp unsalted butter
- 1/3 cup all-purpose flour
- 2 1/2 cups chicken broth
- 1 1/2 cups half and half
- 5 oz fresh spinach (coarsely chopped)
- 2 tsp sea salt
- 1/2 tsp black pepper
- 15 oz ricotta cheese
- 1 large egg
- 1/4 cup parsley
- 1/4 cup parmesan cheese
- 3 cups mozzarella cheese (divided)
Instructions
- Cook lasagna noodles according to package instructions until al dente, then set aside.
- In a skillet over medium heat, sauté onion in olive oil until translucent. Add garlic and cook for an additional minute.
- In a pot, melt butter and whisk in flour until smooth. Gradually add chicken broth and half and half while stirring until thickened. Mix in spinach, salt, and pepper.
- Combine shredded chicken with the sautéed onion-garlic mixture.
- In a baking dish, layer some white sauce at the bottom, followed by three noodles, half the chicken mixture, half the white sauce, and mozzarella cheese. Repeat layers and finish with remaining noodles topped with white sauce and reserved mozzarella.
