- 6 medium chicken thighs (bone-in, excess fat trimmed)
- 2 tablespoons olive oil
- 1 medium onion (sliced)
- 3 teaspoons garlic (minced)
- 1 teaspoon fresh ginger (minced)

- 1 teaspoon smoked paprika
- 1 can chickpeas (rinsed and drained)
- ½ cup dried apricots
- 1 large preserved lemon (sliced) or zest and juice from one lemon
- 1½ cups green olives

Instructions
- Season chicken thighs with salt and pepper.
- In a heavy-bottomed pot, heat olive oil over medium heat. Sauté onions until translucent.
