  • 6 medium chicken thighs (bone-in, excess fat trimmed)
  • 2 tablespoons olive oil
  • 1 medium onion (sliced)
  • 3 teaspoons garlic (minced)
  • 1 teaspoon fresh ginger (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can chickpeas (rinsed and drained)
  • ½ cup dried apricots
  • 1 large preserved lemon (sliced) or zest and juice from one lemon
  • 1½ cups green olives
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with salt and pepper.
  2. In a heavy-bottomed pot, heat olive oil over medium heat. Sauté onions until translucent.
  3. Add seasoned chicken thighs; brown on both sides for about 4-5 minutes each.
  4. Stir in minced garlic, ginger, and spices; cook until fragrant.
  5. Add bay leaves, chickpeas, apricots, preserved lemon slices, and green olives. Mix gently.
  6. Pour in chicken stock or water; bring to a simmer. Cover and cook on low heat for about 30 minutes until chicken is tender.
  7. Garnish with chopped parsley and lemon slices before serving.
