Ingredients

  • Chicken Breast (1 lb, sliced into thin strips) – Lean and tender.
  • Zucchini (2, sliced into half-moons) – Crisp yet tender when cooked.
  • Garlic (3 cloves, minced) – Essential for a bold flavor.
  • Ginger (1 tsp, grated) – Adds warmth and depth.
  • Soy Sauce (3 tbsp) – The base of the sauce.
  • Oyster Sauce (1 tbsp, optional) – Adds extra richness.
  • Honey (1 tbsp) – Balances the saltiness.
  • Cornstarch (1 tsp, mixed with 2 tbsp water) – Thickens the sauce.
  • Sesame Oil (1 tsp) – For an aromatic finish.
  • Vegetable Oil (2 tbsp) – For stir-frying.
  • Red Pepper Flakes (½ tsp, optional) – For a little heat.
  • Sesame Seeds & Green Onions (for garnish) – Adds crunch and color.

Instructions

Step 1: Prepare the Sauce
In a small bowl, mix soy sauce, oyster sauce, honey, and cornstarch slurry. Set aside.

Step 2: Cook the Chicken
Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes until golden and fully cooked. Remove and set aside.

Step 3: Sauté the Vegetables
In the same skillet, add another 1 tbsp oil. Stir in the garlic and ginger, then add the zucchini. Stir-fry for 3–4 minutes until slightly tender but still crisp.

Step 4: Combine Everything
Return the chicken to the pan, pour in the sauce, and toss to coat. Cook for another 2 minutes until the sauce thickens. Drizzle with sesame oil and remove from heat.

 

Step 5: Serve & Enjoy
Garnish with sesame seeds and green onions. Serve hot over rice or noodles.

Notes

  • Slice Chicken Thinly – Helps it cook evenly and quickly.
  • Don’t Overcook the Zucchini – It should be tender-crisp.
