  • 2 tbsp vegetable oil

  • 1½ cup low sodium chicken stock
  • Spices: curry powder, Chinese five spices powder, turmeric powder, chili powder, salt, sugar

Instructions

  2. Chop onion and bell pepper; finely chop garlic.
  3. In a medium pot, whisk together chicken stock and spices until smooth.
  4. Heat the sauce over medium-low until thickened; set aside.
  5. In a large skillet, heat oil and stir-fry the chicken until cooked through.
  6. Add garlic first, then onion, bell pepper, and peas; cook until slightly tender.
  7. Pour in the curry sauce; mix well and adjust consistency if needed.
