For the Blondie Batter:

  • 1 ½ cups light brown sugar, packed – Adds sweetness and chewiness.

  • ¼ cup granulated sugar – Classic snickerdoodle sweetness.
  • 1 ½ teaspoons ground cinnamon – The warm spice that makes these bars irresistible.

Instructions

Step 1: Prep and Preheat

  1. Preheat your oven to 350°F (175°C).
  2. Grease and line an 8×8 or 9×9-inch baking pan with parchment paper for easy removal.

Step 2: Make the Blondie Batter

  1. In a large mixing bowl, whisk together melted butter and brown sugar until smooth.
  2. Add eggs and vanilla extract, mixing until fully combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add the dry ingredients into the wet ingredients, stirring until just combined.

Step 3: Create the Cinnamon Swirl

  1. In a small bowl, mix together granulated sugar and cinnamon.
  2. Pour half of the blondie batter into the prepared baking pan, spreading it evenly.
  3. Sprinkle half of the cinnamon-sugar mixture evenly over the batter.
  4. Pour the remaining blondie batter on top, spreading it gently.
  5. Sprinkle the remaining cinnamon-sugar mixture over the top.

Step 4: Swirl & Bake

  1. Use a toothpick or butter knife to create swirls in the batter, gently mixing the cinnamon-sugar into the blondies.
  2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  3. Let the blondies cool completely in the pan before slicing.

Step 5: Slice & Enjoy!

  1. Cut into squares and serve warm or at room temperature.
  2. Enjoy with a cold glass of milk, a cup of coffee, or as a sweet snack!

Notes

  • Don’t Overbake: They should be set in the middle but still slightly soft for a chewy texture.
