Ingredients
For the Muffins:
- 1 ¾ cups all-purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- ½ cup plain Greek yogurt (or sour cream)
- 2 large eggs
- ½ cup fresh orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
For the Optional Orange Glaze:
- ½ cup powdered sugar
- 2 tablespoons fresh orange juice
- ½ teaspoon orange zest
Instructions
Step 1: Preheat the Oven & Prepare the Pan
- Preheat oven to 375°F (190°C).
- Line a muffin tin with paper liners or grease with nonstick spray.
Step 2: Mix the Dry Ingredients
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Step 3: Mix the Wet Ingredients
- In another bowl, whisk melted butter, Greek yogurt, eggs, orange juice, orange zest, and vanilla extract until smooth.
Step 4: Combine & Fill Muffin Cups
- Gradually fold the wet ingredients into the dry ingredients. Mix until just combined (don’t overmix!).
- Divide batter evenly into the muffin tin, filling each cup about ¾ full.
Step 5: Bake Until Golden
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack.
Step 6: Make the Orange Glaze (Optional)
- In a small bowl, whisk together powdered sugar, orange juice, and zest.
- Drizzle over cooled muffins and let set.
Notes
Use Fresh Orange Juice & Zest – Enhances the natural citrus flavor.
For a Healthier Version – Swap half the flour for whole wheat flour.
For Extra Moisture – Add ¼ cup applesauce or mashed banana.
