- 1 ½ lbs beef sirloin or ribeye, sliced into thin strips
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons all-purpose flour (for thickening)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 ½ cups mushrooms, sliced (white or cremini)
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard (optional, for extra flavor)
- ¾ cup sour cream
- 1 teaspoon paprika (optional, for warmth)
For Serving:
- 12 oz egg noodles, cooked
- Chopped fresh parsley (for garnish)
Instructions
Step 1: Prepare the Beef
- Season beef strips with salt and black pepper.
- Lightly coat with flour, shaking off excess.
Step 2: Sear the Beef
- Heat butter and olive oil in a large skillet over medium-high heat.
- Add beef strips and sear for 2-3 minutes per side, until browned. Remove and set aside.
Step 3: Sauté the Vegetables
- In the same skillet, add onions and mushrooms. Cook for 5 minutes until softened.
- Stir in garlic and cook for another 30 seconds until fragrant.
Step 4: Make the Sauce
- Pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir to deglaze the pan.
- Simmer for 5 minutes, letting the sauce reduce slightly.
Step 5: Finish with Sour Cream
- Lower the heat and stir in sour cream and paprika. Mix until smooth.
- Return the beef to the skillet and simmer for 2-3 minutes until warmed through.
Step 6: Serve & Enjoy!
- Spoon the stroganoff over cooked egg noodles or rice.
- Garnish with chopped parsley and serve warm.
