  • 3 tablespoons unsalted butter

  • 2 cloves garlic (minced)
  • 2 tablespoons all-purpose flour
  • ½ cup dry white grape juice
  • 6 cups low sodium beef broth
  • 8 slices baguette
  • 2 ounces Gruyere cheese (shredded)
  • Fresh thyme and bay leaves for seasoning

Instructions

  1. Slice onions into ¼-inch thick rounds.
  2. In a large Dutch oven, heat butter and olive oil over medium heat until melted.
  3. Add sliced onions and cook, stirring occasionally for about 25–30 minutes until caramelized.
  4. Stir in minced garlic and flour; cook for an additional minute.
  5. Pour in grape juice, scraping the bottom of the pot.
  6. Add beef broth, salt, pepper, thyme, and bay leaves; bring to a simmer and cook uncovered for 30 minutes.
  7. Meanwhile, toast baguette slices in a preheated oven at 400°F for about 5–6 minutes until golden brown.
  8. Remove thyme stems and bay leaves from the soup; adjust seasoning if needed.
  9. Preheat broiler to 425°F; ladle soup into oven-safe bowls topped with toasted baguette slices and shredded cheese.
  10. Broil for 2–4 minutes until cheese is melted and bubbly.
  11. Serve hot, garnished with fresh thyme if desired.
