  • 1 cup basmati rice
  • 1 5.46 oz can coconut milk
  • kosher salt
  • fresh cracked pepper
  • 1 to 1-1/4 lb fresh cod (cut into 4 portions)
  • Old Bay seasoning
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1/4 cup shredded coconut
  • 2 Tbs extra virgin olive oil
  • 2 Tbs unsalted butter
  • 1 20 oz can pineapple tidbits, drained
  • 1/4 cup red onion (finely diced)
  • 1/2 large red bell pepper (seeded, ribs removed, and diced)
  • 12 serrano peppers (seeded, ribs removed, and very finely diced)
  • juice of 1/2 lime
  • zest of 1/2 lime
  • 1 Tbs orange juice
  • 1 tsp extra virgin olive oil
  • pinch kosher salt
  • pinch fresh cracked pepper

Instructions

  1. Preheat your oven to 400°F.
  2. For the coconut rice, combine basmati rice with coconut milk and water in a saucepan, boil, then simmer until cooked.
  3. Prepare the pineapple salsa by mixing drained pineapple, diced red onion, red bell pepper, lime juice and zest, and seasonings in a bowl; refrigerate.
  4. Season cod fillets with salt, pepper, and Old Bay seasoning. Dip in egg wash, then coat in panko-coconut mixture.
  5. Sauté cod in olive oil and butter until golden brown on both sides; transfer to a baking sheet.
  6. Bake the cod for an additional 4-5 minutes until flaky.
  7. Serve cod over coconut rice topped with pineapple salsa.
