For the Bread:
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ cup unsalted butter, melted (or coconut oil for extra coconut flavor)
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- ½ cup crushed pineapple, drained
- ½ cup shredded coconut (plus extra for topping)
- ½ cup chopped walnuts or pecans (optional)
For the Glaze (Optional):
- ½ cup powdered sugar
- 1 tablespoon pineapple juice
- ½ teaspoon vanilla extract
Instructions
Step 1: Preheat & Prepare the Pan
- Preheat oven to 350°F (175°C).
- Grease and line a 9×5-inch loaf pan with parchment paper.
Step 2: Mix the Dry Ingredients
- In a bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
Step 3: Mix the Wet Ingredients
- In another bowl, whisk melted butter and brown sugar until smooth.
- Add eggs and vanilla extract, whisking until combined.
- Stir in mashed bananas and drained pineapple.
Step 4: Combine & Add Coconut
- Gradually fold in the dry ingredients until just combined.
- Stir in shredded coconut and chopped nuts (if using).
Step 5: Bake the Bread
- Pour the batter into the prepared loaf pan and sprinkle extra shredded coconut on top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Step 6: Make the Glaze (Optional)
- In a small bowl, whisk together powdered sugar, pineapple juice, and vanilla extract.
- Drizzle over the cooled bread before serving.
Step 7: Slice & Enjoy!
- Let cool for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature!
Notes
- Use Ripe Bananas – The riper, the sweeter and more flavorful your bread.
- Drain the Pineapple Well – Too much liquid can make the bread dense.
- Don’t Overmix the Batter – Stir until just combined for a soft texture.
- For Extra Coconut Flavor – Use coconut oil instead of butter and add coconut extract.
