For the Bread:

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup unsalted butter, melted (or coconut oil for extra coconut flavor)
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • ½ cup crushed pineapple, drained
  • ½ cup shredded coconut (plus extra for topping)
  • ½ cup chopped walnuts or pecans (optional)

For the Glaze (Optional):

  • ½ cup powdered sugar
  • 1 tablespoon pineapple juice
  • ½ teaspoon vanilla extract

Instructions

Step 1: Preheat & Prepare the Pan

  1. Preheat oven to 350°F (175°C).
  2. Grease and line a 9×5-inch loaf pan with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.

Step 3: Mix the Wet Ingredients

  1. In another bowl, whisk melted butter and brown sugar until smooth.
  2. Add eggs and vanilla extract, whisking until combined.
  3. Stir in mashed bananas and drained pineapple.

Step 4: Combine & Add Coconut

  1. Gradually fold in the dry ingredients until just combined.
  2. Stir in shredded coconut and chopped nuts (if using).

Step 5: Bake the Bread

  1. Pour the batter into the prepared loaf pan and sprinkle extra shredded coconut on top.
  2. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

Step 6: Make the Glaze (Optional)

  1. In a small bowl, whisk together powdered sugar, pineapple juice, and vanilla extract.
  2. Drizzle over the cooled bread before serving.

Step 7: Slice & Enjoy!

  1. Let cool for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature!

Notes

  • Use Ripe Bananas – The riper, the sweeter and more flavorful your bread.
  • Drain the Pineapple Well – Too much liquid can make the bread dense.
  • Don’t Overmix the Batter – Stir until just combined for a soft texture.
  • For Extra Coconut Flavor – Use coconut oil instead of butter and add coconut extract.
