  • 1 lb large shrimp (cleaned)
  • 1 cup unsweetened coconut flakes
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 1/2 cup beef broth
  • 3 tbsp cornstarch
  • 1/2 cup flour
  • 1/2 tsp baking powder
  • 1/8 tsp garlic powder
  • Vegetable oil for frying
  • Sweet chili sauce for dipping

Instructions

  1. Heat vegetable oil in a large skillet over medium heat until hot.
  2. In a mixing bowl, combine unsweetened coconut flakes and panko breadcrumbs.
  3. In another bowl, mix cornstarch. In a third bowl, combine flour, baking powder, garlic powder, egg, and beef broth until smooth.
  4. Dip each shrimp into cornstarch, then coat with the batter before rolling in the coconut mixture.
  5. Fry the shrimp in the heated oil for about three minutes on each side or until golden brown.
  6. Drain excess oil on paper towels and serve with sweet chili sauce.
