- ¾ cup strong brewed coffee (cooled)
- ½ cup buttermilk (or whole milk with 1 teaspoon vinegar)
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter (plus extra for cooking)
- ½ cup chocolate chips (semi-sweet or dark)
For Topping:
- Whipped cream
- Chocolate syrup or maple syrup
- Extra chocolate chips
- Dusting of cocoa powder
Instructions
Step 1: Prepare the Batter
- In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, mix cooled coffee, buttermilk, egg, vanilla extract, and melted butter until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined (don’t overmix).
- Gently fold in chocolate chips.
Step 2: Cook the Pancakes
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
- Pour ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface (2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
Step 3: Serve & Enjoy!
- Stack the pancakes and top with whipped cream, syrup, and extra chocolate chips.
