Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons cocoa powder (optional, for extra richness)
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup strong brewed coffee (cooled)
  • ½ cup buttermilk (or whole milk with 1 teaspoon vinegar)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (plus extra for cooking)
  • ½ cup chocolate chips (semi-sweet or dark)

For Topping:

  • Whipped cream
  • Chocolate syrup or maple syrup
  • Extra chocolate chips
  • Dusting of cocoa powder

Instructions

Step 1: Prepare the Batter

  1. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix cooled coffee, buttermilk, egg, vanilla extract, and melted butter until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined (don’t overmix).
  4. Gently fold in chocolate chips.

Step 2: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
  2. Pour ¼ cup of batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface (2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.

Step 3: Serve & Enjoy!

  1. Stack the pancakes and top with whipped cream, syrup, and extra chocolate chips.
  2. Sprinkle with cocoa powder for a rich finishing touch.
