For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup melted butter
  • ¼ cup granulated sugar

For the Lemon Filling:

  • 1 (14 oz) can sweetened condensed milk
  • 3 large egg yolks
  • ½ cup fresh lemon juice (about 34 lemons)
  • 1 teaspoon lemon zest (optional, for extra flavor)
  • ½ teaspoon vanilla extract

For Garnish (Optional):

  • Whipped cream
  • Lemon slices or zest
  • Powdered sugar

Instructions

Step 1: Preheat & Prepare the Crust

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press mixture firmly into a 9-inch pie dish, covering the bottom and sides.
  4. Bake for 8-10 minutes, then set aside to cool slightly.

Step 2: Make the Lemon Filling

  1. In a mixing bowl, whisk together sweetened condensed milk, egg yolks, lemon juice, lemon zest, and vanilla extract until smooth.
  2. Pour the lemon filling into the pre-baked graham cracker crust.

Step 3: Bake & Cool

  1. Bake for 15-18 minutes, or until the center is set but slightly jiggly.
  2. Remove from oven and let cool at room temperature for 30 minutes.
  3. Refrigerate for at least 3 hours (or overnight) for best results.

Step 4: Serve & Enjoy!

  1. Top with whipped cream, lemon zest, or powdered sugar before serving.
  2. Slice and enjoy a refreshing, creamy lemon treat!

Notes

  • Use Fresh Lemon Juice – It makes a huge difference in flavor!
