  • 1¼ cups all-purpose flour (plus more for dusting)

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tbsp olive oil or neutral oil

  • Optional: ½ tsp garlic powder, dried herbs (like oregano or thyme)


Instructions

Step 1: Make the Dough

  1. In a mixing bowl, add the cottage cheese, flour, baking powder, salt, and oil.

  2. Mix with a spoon or your hands until the dough starts to come together.

  3. Knead for 2–3 minutes until a soft, pliable dough forms. If it’s too sticky, sprinkle in a little extra flour.

Step 2: Rest the Dough
4. Cover the dough with a towel and let it rest for 5–10 minutes at room temperature.

Step 3: Roll the Flatbreads
5. Divide the dough into 4 equal pieces.
6. Lightly flour your surface and roll each piece into a thin circle (about 6–7 inches wide).

Step 4: Cook the Flatbreads
7. Heat a non-stick skillet over medium heat (no oil needed).
8. Place one flatbread into the hot pan and cook for 2–3 minutes, until bubbles form and the underside is golden.
9. Flip and cook the other side for another 1–2 minutes.
10. Repeat with remaining dough, stacking finished flatbreads under a towel to keep warm.

Step 5: Serve and Enjoy
11. Serve warm as a wrap, with dips, or alongside your favorite meals.

Notes

Use Full-Fat Cottage Cheese – For the best texture and flavor.
