Instructions
Step 1: Roast the Garlic
- Preheat your oven to 375°F (190°C).
- Slice the tops off the garlic heads, drizzle with olive oil, and wrap them in foil.
- Roast for 35-40 minutes until the garlic is soft and golden. Let cool, then squeeze the cloves out of their skins.
Step 2: Sauté the Aromatics
- In a medium pot, melt butter over medium heat.
- Add onion and cook for 3-4 minutes until soft and translucent.
- Stir in the roasted garlic, mashing it slightly with a spoon.
Step 3: Simmer the Soup
