  • 2/3 cup oil
  • 2 tbsp butter
  • 1 cup flour
  • 1/3 cup flour (for gravy)
  • Spices: paprika
  • Spices: steak seasoning
  • 1 cup milk (divided)
  • 1 egg

Instructions

  1. Cut chicken breasts lengthwise and season both sides.
  2. Heat oil and butter in a large skillet over medium heat.
  3. In one bowl, combine flour with spices; in another bowl, whisk milk with egg.
  4. Dredge chicken in flour, dip in egg wash, then coat again with flour.
  5. Fry until golden brown and cooked through (165°F internal temp).
  6. Drain excess oil from the skillet, leaving 1/3 cup behind.
  7. Whisk in flour to form a roux, then gradually stir in milk until thickened.
  8. Serve fried chicken topped with gravy.
