Ingredients

2 bagels (plain, whole wheat, or everything)
4 breakfast sausage patties (chicken, turkey, or beef)
4 large eggs
¼ cup milk
1 tbsp butter
4 slices cheddar cheese (or your favorite melty cheese)
½ small red onion, thinly sliced (optional)
1 small tomato, sliced (optional)
1 tbsp BBQ sauce (optional for smoky-sweet flavor)
Salt and black pepper to taste
Fresh cilantro or parsley for garnish (optional)


Instructions

Step 1: Toast the Bagels

  1. Slice the bagels in half and toast them in a toaster or under a broiler until golden brown

  2. Set aside and keep warm

Step 2: Cook the Sausage Patties
3. In a skillet over medium heat, cook the sausage patties for 4–5 minutes per side or until fully cooked and browned
4. Transfer to a plate and cover to keep warm

Step 3: Scramble the Eggs
5. In a bowl, whisk together eggs, milk, salt, and pepper
6. Melt butter in the skillet over medium heat
7. Pour in the egg mixture and gently stir with a spatula until soft curds form and eggs are just set

Step 4: Assemble the Cowboy Bagel
8. On the bottom half of each toasted bagel, place one sausage patty
9. Top with half of the scrambled eggs
10. Lay a slice of cheddar cheese over the warm eggs to melt slightly
11. Add red onion slices and tomato if using
12. Drizzle with BBQ sauce for added flavor
13. Cap each sandwich with the top half of the bagel

Step 5: Serve Hot
14. Serve immediately with fresh fruit, breakfast potatoes, or a side of hot sauce
