Ingredients
For the Filling:

2 cups butternut squash purée (fresh roasted or canned)

1 cup ricotta cheese

¼ cup grated Parmesan cheese

1 egg
-
1 tsp garlic powder

½ tsp salt

¼ tsp black pepper

½ tsp dried sage or thyme
For the Sauce:

2 tbsp butter

2 tbsp all-purpose flour

2 cups milk (whole or 2%)

¼ tsp nutmeg

½ tsp salt

¼ cup grated Parmesan cheese
For the Roll-Ups:

9–12 lasagna noodles (regular or oven-ready, cooked if needed)

1 cup shredded mozzarella cheese

Chopped parsley or basil for garnish
Instructions
Step 1: Make the Filling

In a mixing bowl, combine butternut squash purée, ricotta, Parmesan, egg, garlic powder, salt, pepper, and sage.

Mix until smooth and well combined. Set aside.
Step 2: Cook the Lasagna Noodles
3. Boil noodles according to package instructions until al dente.
4. Drain and lay flat on parchment paper or a lightly oiled surface to prevent sticking.
Step 3: Prepare the Béchamel Sauce
5. In a saucepan, melt butter over medium heat.
6. Whisk in flour and cook for 1–2 minutes until slightly golden.
7. Gradually whisk in milk, stirring constantly to avoid lumps.
8. Add nutmeg and salt. Simmer until thickened, about 5 minutes.
9. Stir in Parmesan cheese and remove from heat.
Step 4: Assemble the Roll-Ups
10. Preheat oven to 375°F (190°C).
11. Spread ½ cup béchamel sauce on the bottom of a 9×13 inch baking dish.
12. Spread 2–3 tablespoons of the squash filling on each noodle.
13. Roll up each noodle and place seam-side down in the baking dish.
14. Pour remaining béchamel sauce over the roll-ups.
15. Sprinkle mozzarella evenly on top.
Step 5: Bake
16. Cover the dish with foil and bake for 25 minutes.
17. Remove foil and bake another 10–15 minutes until cheese is golden and bubbly.
18. Let cool for 5–10 minutes before serving.
Notes
Use Fresh Squash – Roast and purée your own for deeper flavor.
Don’t Overcook Noodles – Slightly underdone helps keep roll-ups firm.
Thin Sauce Slightly – If needed, add extra milk to the béchamel for easier spreading.
