  • 1 tbsp olive oil or butter

  • 1 lb ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 medium potatoes, peeled and cubed

  • 3 cups beef or vegetable broth

  • 1 tsp Worcestershire sauce

  • 1 tsp mustard (yellow or Dijon)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ¼ tsp dried thyme

  • 1½ cups whole milk (or half-and-half)

  • 1 cup shredded cheddar cheese

  • ½ cup cream cheese or sour cream (for extra creaminess)

  • Optional: crumbled cooked bacon, pickles, or green onions for garnish


Instructions

Step 1: Brown the Beef
In a large soup pot, heat oil over medium heat.
Add ground beef and cook until browned, breaking it up with a spoon.
Drain excess fat if needed and set the beef aside.

Step 2: Sauté the Vegetables
In the same pot, add a bit more oil if necessary.
Sauté onions, garlic, carrots, and celery for about 5 minutes, until softened.

Step 3: Simmer the Potatoes
Add potatoes, broth, Worcestershire sauce, mustard, salt, pepper, paprika, and thyme.
Bring to a boil, then reduce heat and simmer for 10–15 minutes, until potatoes are fork-tender.

Step 4: Stir in the Creaminess
Return the cooked ground beef to the pot.
Stir in milk, shredded cheese, and cream cheese or sour cream.
Simmer gently until cheese is melted and soup is thickened—about 5–7 minutes. Do not boil.

Step 5: Taste and Serve
Taste and adjust seasoning if needed.
Ladle into bowls and top with crumbled bacon, chopped pickles, or green onions if desired.

Notes

Use Sharp Cheddar – Adds a richer cheese flavor.
Dice Potatoes Evenly – So they cook at the same rate.
Don’t Boil After Adding Cheese – High heat can make it grainy.
Add a Kick – A dash of hot sauce or cayenne pepper if you like heat.
