  • 2 boneless skinless chicken breasts
  • 2 celery ribs
  • 1/2 cup yellow onion
  • 4 cups chicken broth
  • 2 tablespoons all-purpose flour
  • 3 tablespoons butter
  • 2 cups white minute rice
  • Olive oil and assorted seasonings

Instructions

  1. In a skillet, heat olive oil over medium heat. Season the chicken breasts with paprika, seasoned salt, onion powder, garlic powder, and pepper. Cook for 4–5 minutes per side until the internal temperature reaches 165°F. Remove from heat and shred the chicken.
  2. Reduce heat to low, add diced celery and onions to the skillet. Sauté until softened, then stir in minced garlic for about 30 seconds.
  3. Add butter to the skillet; once melted, sprinkle flour over vegetables and stir continuously for a couple of minutes. Gradually pour in chicken broth while whisking until smooth; bring to a boil.
  4. Stir in shredded chicken and minute rice; let simmer for 2–3 minutes before turning off the stove. Allow resting briefly to absorb excess liquid.
