  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tbsp avocado oil
  • 4 tbsp salted butter
  • 1 yellow onion, diced
  • 2 carrots, sliced
  • 23 celery stalks, sliced
  • 56 garlic cloves, minced
  • 3 tbsp all-purpose flour
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 boxes of Ben's Original Long Grain and Wild Rice

Instructions

  1. Season the chicken with spices.
  2. Heat avocado oil in a large pot over medium heat; cook seasoned chicken until done, then set aside.
  3. In the same pot, melt 1 tablespoon of butter; sauté onions, carrots, and celery for about 10 minutes. Add garlic and cook for an additional minute.
  4. Stir in remaining butter until melted; whisk in flour for about 3 minutes.
  5. Gradually add chicken broth and heavy cream; mix well.
  6. Incorporate rice from the boxes along with seasoning packets; return chopped chicken to the pot.
  7. Bring to a gentle boil, then cover and simmer on low for approximately 20 minutes.
