For the Chili Base:

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 green bell pepper, diced

  • 1½ tsp ground cumin

  • 1 tsp chili powder

  • ½ tsp paprika

  • ¼ tsp black pepper

  • ½ tsp salt

For the Main Ingredients:

  • 2 cups cooked shredded chicken (rotisserie or boiled)

  • 2 cans (15 oz each) white beans, drained and rinsed (e.g., cannellini or great northern)

  • 1½ cups frozen or canned corn (drained if canned)

  • 1 can (4 oz) mild green chilies (optional for extra flavor)

  • 3 cups low-sodium chicken broth

For the Creamy Finish:

  • 4 oz cream cheese, softened and cubed

  • ½ cup sour cream

  • ½ cup heavy cream or whole milk

  • 1 cup shredded Monterey Jack cheese or mozzarella

For Garnish:

  • Fresh cilantro, chopped

  • Sliced jalapeños (optional)

  • Extra shredded cheese

  • Crushed tortilla chips or crackers

  • Lime wedges


Instructions

Step 1: Sauté the Aromatics

  1. In a large pot, heat olive oil over medium heat.

  2. Add diced onion and green bell pepper. Cook for 4–5 minutes until softened.

  3. Stir in the garlic, cumin, chili powder, paprika, salt, and black pepper. Cook for 1 minute until fragrant.

Step 2: Add Main Ingredients

  1. Add the shredded chicken, white beans, corn, green chilies (if using), and chicken broth.

  2. Stir everything together and bring to a gentle boil.

  3. Reduce heat and simmer uncovered for 15–20 minutes to blend the flavors.

Step 3: Make it Creamy

  1. Add the cream cheese and stir until fully melted and smooth.

  2. Stir in the sour cream and heavy cream.

  3. Add shredded cheese and mix until the chili is creamy and well combined.

  4. Simmer for another 5–7 minutes, stirring often, until the chili thickens slightly.

Step 4: Adjust & Serve

 

  1. Taste and adjust salt or spice if needed.

  2. Ladle into bowls and top with your favorite garnishes.

  3. Serve hot with lime wedges, tortilla chips, or warm bread.
