  • 30 Oreo cookies (crumbs)
  • 24 oz cream cheese (room temperature)
  • 1/2 cup sour cream (room temperature)
  • 3 eggs (room temperature)
  • 3.5 oz dark chocolate
  • 2/3 cup heavy cream (cold)
  • 1/2 tsp espresso powder
  • 1/3 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 egg yolk (room temperature)
  • 2 tbsp cornstarch
  • 2 tbsp espresso powder for filling
  • 1/2 tsp espresso powder for ganache
  • 2 tbsp powdered sugar

Instructions

  1. Preheat the oven to 180°C (350°F) and prepare a springform pan with parchment paper.
  2. In a food processor, pulse Oreos into fine crumbs. Mix with espresso powder and melted butter, then press into the bottom of the springform pan.
  3. Bake the crust for 8 minutes and let cool.
  4. Lower the oven temperature to 140°C (280°F). In a mixing bowl, combine cream cheese, sugar, sour cream, and vanilla until creamy. Add eggs one at a time while mixing gently.
  5. Sift in cornstarch and espresso powder; mix until just combined.
  6. Pour cheesecake batter over the crust and bake for about an hour until edges are set.
  7. Allow to cool in the oven with the door ajar for 1-2 hours before refrigerating for at least 5 hours.
  8. Prepare chocolate ganache by melting dark chocolate with heavy cream and espresso powder; pour over cooled cheesecake.
  9. Whip cold heavy cream with powdered sugar and vanilla until stiff peaks form; pipe around the edges before serving.
