For the Bisque:

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 celery stalk, finely chopped
  • 1 small carrot, grated
  • 2 tablespoons tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 3 cups seafood broth (or chicken broth)
  • 1 teaspoon Old Bay seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper (optional, for spice)
  • ½ cup heavy cream
  • ½ cup whole milk
  • ½ lb shrimp, peeled and deveined
  • ½ lb lump crab meat

For Garnish:

  • Fresh parsley, chopped
  • Extra lump crab meat
  • A drizzle of cream

Instructions

Step 1: Sauté the Aromatics

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onion, garlic, celery, and carrot, cooking for 5 minutes until softened.

Step 2: Build the Tomato Base

  1. Stir in tomato paste and cook for 1 minute to deepen the flavor.
  2. Add crushed tomatoes, seafood broth, Old Bay seasoning, paprika, salt, pepper, thyme, and cayenne (if using).
  3. Bring to a simmer and cook for 15 minutes, stirring occasionally.

Step 3: Blend for a Smooth Bisque

  1. (Optional) Use an immersion blender or regular blender to puree the soup until smooth.

Step 4: Add the Cream & Seafood

  1. Stir in heavy cream and milk, then add shrimp and crab meat.
  2. Simmer for 5 minutes, until shrimp are cooked through.

Step 5: Serve & Enjoy!

  1. Ladle into bowls and garnish with fresh parsley, extra crab, and a drizzle of cream.
  2. Serve hot with crusty bread or garlic toast.

Notes

Use Fresh or High-Quality Canned Crab – Ensures the best flavor.
Blend for a Smoother Texture – Creates a velvety, restaurant-quality bisque.
For Extra Depth – Add a splash of white wine when sautéing the aromatics.
Adjust the Heat – Add more cayenne if you like it spicier.
