Ingredients
For the Creamy Garlic Chicken:

4 boneless, skinless chicken breasts

Salt and pepper to taste

1 tsp garlic powder

1 tsp onion powder

2 tbsp olive oil or butter

6 cloves garlic, minced

½ cup chicken broth

1 cup heavy cream (or half-and-half)

½ cup grated parmesan cheese

1 tsp Dijon mustard

½ tsp dried thyme or Italian seasoning

Chopped parsley for garnish (optional)
For the Herb Mashed Potatoes:

2 lbs (900 g) potatoes (Yukon gold or russet), peeled and cubed

4 tbsp butter

½ cup heavy cream or milk

2 tbsp sour cream (optional for extra creaminess)

2 tbsp chopped fresh herbs (parsley, chives, or thyme)

Salt and pepper to taste
Instructions
Step 1: Cook the Potatoes

Bring a large pot of salted water to a boil.

Add cubed potatoes and cook for 12–15 minutes until fork-tender.

Drain well and return to the pot.

Mash with butter, cream, and sour cream.

Stir in chopped herbs, salt, and pepper. Cover and keep warm.
Step 2: Prepare the Chicken
6. Pat chicken breasts dry and season both sides with salt, pepper, garlic powder, and onion powder.
7. Heat olive oil or butter in a large skillet over medium-high heat.
8. Sear chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
Step 3: Make the Creamy Garlic Sauce
9. In the same skillet, reduce heat to medium and add minced garlic. Sauté for 30 seconds until fragrant.
10. Add chicken broth, scraping the bottom of the pan to deglaze.
11. Stir in cream, parmesan, mustard, and thyme. Simmer for 5 minutes until thickened slightly.
12. Return chicken to the pan and spoon sauce over. Simmer for 5 more minutes on low heat.
Step 4: Plate & Serve
13. Spoon mashed potatoes onto each plate.
14. Top with a chicken breast and plenty of creamy garlic sauce.
15. Garnish with fresh parsley and extra herbs if desired.
