For the Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for spice)

For the Gnocchi & Cream Sauce:

  • 1 (16 oz) package potato gnocchi (fresh or shelf-stable)
  • ½ cup sun-dried tomatoes, chopped
  • 2 tablespoons sun-dried tomato oil (from the jar)
  • 1 ½ cups heavy cream (or half-and-half for a lighter option)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh basil or parsley, chopped (for garnish)

Instructions

Step 1: Cook the Shrimp

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Season shrimp with salt, black pepper, and red pepper flakes.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque.
  4. Remove from the skillet and set aside.

Step 2: Cook the Gnocchi

  1. If using fresh gnocchi, add directly to the skillet in Step 7.
  2. If using shelf-stable gnocchi, boil in salted water for 2-3 minutes until they float, then drain.

Step 3: Make the Creamy Sun-Dried Tomato Sauce

  1. In the same skillet, add sun-dried tomatoes and sun-dried tomato oil. Sauté for 1 minute.
  2. Pour in heavy cream, Parmesan, garlic powder, Italian seasoning, salt, and black pepper. Stir and let simmer for 3-4 minutes until slightly thickened.

Step 4: Combine Everything

  1. Add gnocchi to the sauce, tossing to coat.
  2. Return shrimp to the skillet and stir gently. Simmer for 1-2 minutes, allowing flavors to meld.

Step 5: Serve & Enjoy!

  1. Garnish with fresh basil or parsley and serve hot!

Notes

Don’t Overcook the Shrimp – They cook quickly and should remain tender.
Use Sun-Dried Tomato Oil – Adds extra depth and flavor to the sauce.
For a Lighter Version – Use half-and-half instead of heavy cream.
For Extra Flavor – Add a squeeze of lemon or a pinch of red pepper flakes.
