Ingredients
For the Shrimp:
- 1 lb shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional, for spice)
For the Gnocchi & Cream Sauce:
- 1 (16 oz) package potato gnocchi (fresh or shelf-stable)
- ½ cup sun-dried tomatoes, chopped
- 2 tablespoons sun-dried tomato oil (from the jar)
- 1 ½ cups heavy cream (or half-and-half for a lighter option)
- ½ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon fresh basil or parsley, chopped (for garnish)
Instructions
Step 1: Cook the Shrimp
- Heat olive oil and butter in a large skillet over medium-high heat.
- Season shrimp with salt, black pepper, and red pepper flakes.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque.
- Remove from the skillet and set aside.
Step 2: Cook the Gnocchi
- If using fresh gnocchi, add directly to the skillet in Step 7.
- If using shelf-stable gnocchi, boil in salted water for 2-3 minutes until they float, then drain.
Step 3: Make the Creamy Sun-Dried Tomato Sauce
- In the same skillet, add sun-dried tomatoes and sun-dried tomato oil. Sauté for 1 minute.
- Pour in heavy cream, Parmesan, garlic powder, Italian seasoning, salt, and black pepper. Stir and let simmer for 3-4 minutes until slightly thickened.
Step 4: Combine Everything
- Add gnocchi to the sauce, tossing to coat.
- Return shrimp to the skillet and stir gently. Simmer for 1-2 minutes, allowing flavors to meld.
Step 5: Serve & Enjoy!
- Garnish with fresh basil or parsley and serve hot!
Notes
Don’t Overcook the Shrimp – They cook quickly and should remain tender.
Use Sun-Dried Tomato Oil – Adds extra depth and flavor to the sauce.
For a Lighter Version – Use half-and-half instead of heavy cream.
For Extra Flavor – Add a squeeze of lemon or a pinch of red pepper flakes.
