For the Chicken Meatballs:

  • 1 lb ground chicken

  • 1 egg

  • ¼ cup breadcrumbs

  • ¼ cup grated Parmesan

  • 1 garlic clove, minced

  • 1 tbsp fresh parsley or 1 tsp dried

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tbsp olive oil (for cooking)

For the Creamy Mushroom Sauce:

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 8 oz mushrooms, sliced (cremini or button)

  • 2 garlic cloves, minced

  • 1 tsp fresh thyme or ½ tsp dried

  • ½ cup chicken broth

  • ½ cup heavy cream or cooking cream

  • 2 tbsp Parmesan cheese

  • Salt and pepper to taste

  • Fresh parsley, for garnish


Instructions

Step 1: Make the Meatballs

  1. In a bowl, combine ground chicken, egg, breadcrumbs, Parmesan, garlic, parsley, salt, and pepper.

  2. Mix gently until just combined.

  3. Roll into 16–18 small meatballs.

  4. Heat 1 tbsp olive oil in a large skillet over medium heat.

  5. Add the meatballs in batches, searing until golden on all sides (about 6–8 minutes total).

  6. Transfer to a plate and set aside.

Step 2: Cook the Mushrooms
7. In the same skillet, add butter and olive oil.
8. Sauté the mushrooms over medium-high heat until golden and tender, about 5–6 minutes.
9. Add garlic and thyme, and cook for another 1–2 minutes until fragrant.

Step 3: Make the Creamy Sauce
10. Pour in chicken broth, scraping up any browned bits from the pan.
11. Reduce heat to medium-low and stir in the cream.
12. Simmer for 3–4 minutes, then add Parmesan.
13. Season with salt and pepper to taste.

Step 4: Combine & Simmer
14. Return the meatballs to the pan, nestling them into the sauce.
15. Simmer for 5–7 minutes until the meatballs are fully cooked and the sauce thickens slightly.
16. Garnish with chopped parsley and serve warm.

Notes

Don’t Overmix – Keeps meatballs light and tender.
Use Fresh Herbs – For brighter, more aromatic flavor.
Deglaze the Pan – Scrape the browned bits for a deeper sauce flavor.
Add Veggies – Spinach or peas make great additions to the sauce.
