Ingredients

2 ½ cups egg noodles (or any short pasta)
1 cup frozen green peas
2 tbsp butter
2 tbsp all-purpose flour
1 ½ cups milk (whole milk preferred for creaminess)
½ cup sour cream or cream cheese (for extra richness)
½ tsp garlic powder
½ tsp onion powder
½ tsp salt (or to taste)
¼ tsp black pepper
¼ cup grated Parmesan cheese (optional, for savory depth)
Fresh parsley, chopped (optional for garnish)


Instructions

Step 1: Cook the Noodles
Bring a large pot of salted water to a boil.
Add the egg noodles and cook according to package instructions until al dente.
Add the frozen peas to the boiling noodles during the last 2 minutes of cooking.
Drain and set aside.

Step 2: Make the Cream Sauce
In the same pot, melt the butter over medium heat.
Whisk in the flour and cook for 1 minute to form a roux.
Gradually pour in the milk, whisking constantly until smooth.
Continue cooking for 3–4 minutes until the sauce begins to thicken.

Step 3: Stir in the Creamy Goodness
Reduce heat to low and stir in the sour cream (or cream cheese).
Add garlic powder, onion powder, salt, and pepper.
Stir until smooth and well blended.

Step 4: Combine Everything
Return the cooked noodles and peas to the pot with the cream sauce.
Gently toss until everything is evenly coated.
If using, stir in the Parmesan cheese for a boost of umami flavor.

Step 5: Serve & Garnish
Spoon into bowls or serve as a side dish.
Sprinkle with chopped fresh parsley and extra Parmesan if desired.
Serve warm and enjoy!

Notes

Use Whole Milk – It makes the sauce richer and creamier.
Don’t Overcook the Noodles – Slightly al dente noodles hold up better in the sauce.
Add a Protein – Stir in diced cooked chicken, turkey, or ham to turn this into a full meal.
Go Cheese Crazy – Swap Parmesan for cheddar or add both for extra cheesy flavor.
