  • 1/4 cup all-purpose flour
  • 32 ounces low-sodium chicken broth
  • 8 ounces refrigerated cheese tortellini
  • 5 ounces baby spinach
  • 1 cup half-and-half

Instructions

  1. In a large pot over medium heat, cook the chicken sausage until browned and no longer pink, about 6-8 minutes. Break it into small pieces.
  2. Add the diced onion, minced garlic, kosher salt, black pepper, and optional red pepper flakes. Cook until the onion is softened, about 3 minutes.
  3. Sprinkle in the flour and stir constantly for about 1 minute to remove raw flour taste.
  4. Pour in the chicken broth while scraping the pot's bottom to release any bits. Increase heat to bring to a simmer.
  5. Reduce heat and let it simmer gently for about 5 minutes.
  6. Stir in the cheese tortellini and baby spinach; cook according to tortellini package instructions but reduce cooking time by one minute.
  7. Finally, stir in the half-and-half. Adjust seasoning with salt and pepper before serving.
