- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning (or homemade mix)
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 3 cups beef broth (or chicken broth)
- 1 (8 oz) block cream cheese, softened
- 1 cup heavy cream (or half-and-half)
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
For Toppings (Optional):
- Sour cream
- Shredded cheese
- Sliced jalapeños
- Chopped cilantro
- Crushed tortilla chips
- Avocado slices
Instructions
Step 1: Cook the Meat
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Stir in onions and garlic, cooking for 2-3 minutes until softened.
- Add taco seasoning, stirring to coat the meat evenly.
Step 2: Add the Soup Ingredients
- Pour in diced tomatoes, black beans, corn, and broth. Stir to combine.
- Bring to a gentle simmer and cook for 10 minutes, letting the flavors meld.
Step 3: Make It Creamy
- Reduce heat to low and stir in cream cheese until melted.
- Pour in heavy cream, then stir in shredded cheddar cheese until smooth.
- Simmer for 5 more minutes, stirring occasionally.
Step 4: Serve & Enjoy!
- Ladle into bowls and top with your favorite toppings.
- Serve hot with tortilla chips or warm cornbread on the side.
Notes
- Use Full-Fat Dairy – It makes the soup extra creamy and rich.
