For the Soup:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning (or homemade mix)
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 3 cups beef broth (or chicken broth)
  • 1 (8 oz) block cream cheese, softened
  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil

For Toppings (Optional):

  • Sour cream
  • Shredded cheese
  • Sliced jalapeños
  • Chopped cilantro
  • Crushed tortilla chips
  • Avocado slices

Instructions

Step 1: Cook the Meat

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Stir in onions and garlic, cooking for 2-3 minutes until softened.
  4. Add taco seasoning, stirring to coat the meat evenly.

Step 2: Add the Soup Ingredients

  1. Pour in diced tomatoes, black beans, corn, and broth. Stir to combine.
  2. Bring to a gentle simmer and cook for 10 minutes, letting the flavors meld.

Step 3: Make It Creamy

  1. Reduce heat to low and stir in cream cheese until melted.
  2. Pour in heavy cream, then stir in shredded cheddar cheese until smooth.
  3. Simmer for 5 more minutes, stirring occasionally.

Step 4: Serve & Enjoy!

  1. Ladle into bowls and top with your favorite toppings.
  2. Serve hot with tortilla chips or warm cornbread on the side.

Notes

  • Use Full-Fat Dairy – It makes the soup extra creamy and rich.
  • Don’t Boil After Adding Cream Cheese – Keep the heat low to prevent curdling.
  • For Extra Spice – Add a diced jalapeño or an extra teaspoon of chili powder.
  • For a Thicker Soup – Add 1 tablespoon cornstarch mixed with 2 tablespoons water.
