Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 3 cups vegetable or chicken broth
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional, for heat)
- 1 cup heavy cream (or half-and-half for a lighter option)
- 10 oz cheese tortellini (fresh or frozen)
- ½ cup grated Parmesan cheese
- 2 tablespoons tomato paste
- 1 teaspoon sugar (to balance acidity)
- Fresh basil or parsley (for garnish)
Instructions
Step 1: Sauté the Aromatics
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and sauté for 3-4 minutes until soft.
- Stir in the garlic and cook for 30 seconds, until fragrant.
Step 2: Build the Tomato Base
- Add the crushed tomatoes, broth, tomato paste, basil, oregano, salt, black pepper, and sugar.
- Stir well and bring to a gentle simmer. Let cook for 10 minutes, stirring occasionally.
Step 3: Blend for a Creamy Texture (Optional)
- If you prefer a smoother soup, use an immersion blender to blend until creamy.
- If you like a chunkier texture, leave it as is!
Step 4: Add the Cream & Tortellini
- Reduce heat to low and stir in the heavy cream.
- Add the cheese tortellini and simmer for 5-7 minutes, or until the pasta is tender.
Step 5: Final Touches
- Stir in the grated Parmesan cheese, allowing it to melt into the soup.
- Taste and adjust seasoning, adding more salt or pepper if needed.
Step 6: Serve & Garnish
- Ladle the soup into bowls and garnish with fresh basil or parsley.
- Serve hot with extra Parmesan cheese on top!
Notes
Use Fresh Tortellini – It cooks faster and has the best flavor!
Blend for Extra Creaminess – Use an immersion blender before adding tortellini for a silky-smooth texture.
Don’t Overcook the Tortellini – Remove from heat once tender to prevent mushy pasta.
Adjust the Spice – Add red pepper flakes for heat or extra Parmesan for a cheesier touch.
