  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 10 oz cheese tortellini (fresh or frozen)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar (to balance acidity)
  • Fresh basil or parsley (for garnish)

Instructions

Step 1: Sauté the Aromatics

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté for 3-4 minutes until soft.
  3. Stir in the garlic and cook for 30 seconds, until fragrant.

Step 2: Build the Tomato Base

  1. Add the crushed tomatoes, broth, tomato paste, basil, oregano, salt, black pepper, and sugar.
  2. Stir well and bring to a gentle simmer. Let cook for 10 minutes, stirring occasionally.

Step 3: Blend for a Creamy Texture (Optional)

  1. If you prefer a smoother soup, use an immersion blender to blend until creamy.
  2. If you like a chunkier texture, leave it as is!

Step 4: Add the Cream & Tortellini

  1. Reduce heat to low and stir in the heavy cream.
  2. Add the cheese tortellini and simmer for 5-7 minutes, or until the pasta is tender.

Step 5: Final Touches

  1. Stir in the grated Parmesan cheese, allowing it to melt into the soup.
  2. Taste and adjust seasoning, adding more salt or pepper if needed.

Step 6: Serve & Garnish

  1. Ladle the soup into bowls and garnish with fresh basil or parsley.

Notes

Use Fresh Tortellini – It cooks faster and has the best flavor!
Blend for Extra Creaminess – Use an immersion blender before adding tortellini for a silky-smooth texture.
