Ingredients

For the Soup:
• 1 lb ground turkey sausage (mild or spicy)
• 1 tbsp olive oil (if needed)
• 1 medium onion, chopped
• 2 garlic cloves, minced
• 4 cups diced potatoes (Yukon Gold or russet)
• 4 cups low-sodium chicken broth
• 1 tsp Italian seasoning
• ½ tsp smoked paprika (optional)
• Salt and black pepper to taste
• 1 cup chopped kale or spinach (optional)
• 1 cup heavy cream or half-and-half
• ¼ cup grated Parmesan cheese (optional, for richness)

Optional Toppings:
• Crumbled cooked turkey bacon
• Extra Parmesan or shredded cheddar
• Fresh parsley or chives
• Crushed red pepper flakes


Instructions

Step 1: Cook the Turkey Sausage
In a large soup pot over medium heat, brown the turkey sausage until fully cooked, breaking it up with a spatula as it cooks.
If sausage is very lean and sticks, add a drizzle of olive oil.
Once browned, remove and set aside if you want to build flavor in the veggies separately, or leave it in the pot.

Step 2: Sauté Aromatics
Add onion to the same pot and sauté for 3–4 minutes until softened.
Add garlic and cook for another 30 seconds until fragrant.

Step 3: Simmer with Potatoes
Return sausage to the pot (if removed).
Add diced potatoes, chicken broth, Italian seasoning, paprika (if using), salt, and pepper.
Bring to a boil, then reduce heat and simmer uncovered for 15–20 minutes, or until potatoes are fork-tender.

Step 4: Add Cream and Greens
Stir in heavy cream and chopped kale or spinach, if using.
Simmer for 5 more minutes until greens are wilted and soup is creamy.
Stir in Parmesan cheese (optional) and adjust seasoning as needed.

Step 5: Serve and Garnish
Ladle soup into bowls and top with your favorite garnishes like turkey bacon, more cheese, or fresh herbs.
Serve hot with crusty bread or a green salad on the side.

Notes

Use Yukon Gold Potatoes – They hold their shape and add creaminess.
Brown the Sausage Well – It adds extra depth of flavor.
Adjust Thickness – Add a little more broth for a lighter texture or mash a few potatoes for extra thickness.
