Ingredients
For the Caramel Base:
-
½ cup unsalted butter
-
1 cup brown sugar, packed
-
2 tbsp light corn syrup
For the Custard Soak:
-
1 loaf (about 14 oz) French bread or brioche, cut into 1-inch slices
-
5 large eggs
-
1½ cups whole milk
-
½ cup heavy cream
-
⅓ cup granulated sugar
-
1 tbsp vanilla extract
-
½ tsp cinnamon
-
¼ tsp salt
For the Brûlée Topping:
-
2–3 tbsp granulated sugar (for sprinkling)
-
Fresh berries or whipped cream (optional, for serving)
Instructions
Step 1: Make the Caramel Base
In a saucepan over medium heat, melt the butter, then stir in the brown sugar and corn syrup.
Cook until the mixture is smooth and bubbling, about 2–3 minutes.
Pour the caramel mixture into the bottom of a greased 9×13-inch baking dish, spreading it evenly.
Step 2: Arrange the Bread
Place the slices of bread over the caramel in a single, tight layer.
If needed, cut some slices in half to fill gaps—try not to overlap too much.
Step 3: Prepare the Custard Mixture
In a large bowl, whisk together the eggs, milk, cream, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
Pour the custard evenly over the bread slices, pressing gently to help the bread soak it in.
Step 4: Chill Overnight
Cover the dish with foil and refrigerate for at least 6 hours, or preferably overnight.
This allows the bread to fully absorb the custard, creating that rich French toast texture.
Step 5: Bake the Casserole
Preheat your oven to 350°F (175°C).
Remove the casserole from the fridge and let it sit at room temperature for about 15–20 minutes.
Bake, covered with foil, for 30 minutes. Then uncover and bake an additional 15–20 minutes, or until the top is golden and puffed and the custard is set.
Step 6: Add the Brûlée Topping
Let the casserole cool slightly, then sprinkle the top with granulated sugar.
Use a kitchen torch to melt the sugar until it forms a golden, crispy topping.
If you don’t have a torch, place the casserole under the broiler for 1–2 minutes, watching closely to prevent burning.
Step 7: Garnish and Serve
Slice and serve warm, topped with fresh berries, whipped cream, or a dusting of powdered sugar if desired.
Notes
Use Sturdy Bread – Brioche, challah, or French bread works best. Let it dry out slightly before soaking.
Don’t Rush the Soak – Overnight refrigeration gives the best custardy texture.
Torch It – A kitchen torch gives the most authentic brûlée crunch.
Monitor the Broiler – If using the broiler for caramelizing sugar, keep a close eye to avoid burning.
Prep Ahead – Make it up to 24 hours ahead of time and bake fresh in the morning.
