Ingredients

  • 2 lbs little potatoes (halved)
  • 1 cup + 2 tsp white vinegar
  • 1 tbsp salt
  • 2 tbsp butter
  • Freshly cracked black pepper
  • Flaked sea salt
  • Chopped chives (optional for garnish)

Instructions

  1. Bring a large pot of water to a boil. Add the halved little potatoes, 1 cup of vinegar, and 1 tablespoon of salt. Boil until fork-tender, about 20 minutes.
  2. Drain the potatoes in a strainer and let them sit for a couple of minutes to dry slightly.
  3. Heat the butter in a cast iron skillet over medium-high heat. Add the drained potatoes, season with black pepper, and fry until golden brown and crispy.
  4. Serve immediately, drizzled with the remaining vinegar and sprinkled with flaked sea salt and chives if desired.
