  • 1 lb boneless, skinless chicken breasts – Cut into bite-sized cubes.
  • ½ cup buttermilk – Helps tenderize and adds moisture.
  • 1 cup cornstarch – Creates an extra crispy coating.

  • ½ teaspoon salt – Enhances the flavors.
  • ½ teaspoon black pepper – For a mild spice.
  • ½ teaspoon smoked paprika – Adds a touch of warmth.
  • Vegetable oil – For frying.

For the Bang Bang Sauce:

  • ½ cup mayonnaise – The creamy base.
  • 2 tablespoons sweet chili sauce – Adds sweetness and mild heat.
  • 1 tablespoon honey – For extra sweetness and balance.
  • 1 teaspoon hot sauce (optional) – For an extra kick.
  • 1 teaspoon fresh lime juice – Brightens up the sauce.

Instructions

Step 1: Prep the Chicken

  1. In a bowl, add chicken pieces and buttermilk. Let it soak for 10 minutes while you prepare the coating.

Step 2: Coat the Chicken

  1. In another bowl, mix cornstarch, garlic powder, salt, black pepper, and smoked paprika.
  2. Remove chicken from buttermilk, letting excess drip off, then coat each piece in the cornstarch mixture.

Step 3: Fry Until Crispy

  1. Heat about 2 inches of vegetable oil in a skillet to 350°F (175°C).
  2. Fry chicken in batches for 3-4 minutes per side, until golden brown and crispy.
  3. Remove with a slotted spoon and drain on a paper towel-lined plate.

Step 4: Make the Bang Bang Sauce

  1. In a small bowl, whisk together mayonnaise, sweet chili sauce, honey, hot sauce (if using), and lime juice.

Step 5: Toss & Serve

  1. Drizzle or toss the crispy chicken with Bang Bang sauce.
  2. Garnish with chopped green onions or sesame seeds for extra flavor.
  3. Serve immediately and enjoy!

Notes

Use cornstarch instead of flour – It creates a lighter, crispier crust!
Double fry for extra crunch – Fry once, let it rest for 2 minutes, then fry again for another minute.
Don’t overcrowd the pan – Fry in small batches to keep the oil temperature steady.
Sauce it just before serving – This keeps the chicken crispy!
