For the Chicken:

  • 4 boneless, skinless chicken breasts – Tender, juicy, and perfect for frying.
  • 1 cup all-purpose flour – For dredging the chicken.
  • 1 teaspoon garlic powder – Adds a savory flavor.

  • ½ teaspoon salt and pepper, to taste – To season the chicken.
  • 2 eggs, beaten – To coat the chicken.
  • 1 cup breadcrumbs – For that crispy texture.
  • 2 tablespoons olive oil – For frying.

For the Alfredo Sauce:

  • 1 cup heavy cream – Rich and creamy base for the sauce.
  • 1 cup grated Parmesan cheese – For that perfect cheesy finish.
  • 2 tablespoons butter – Adds richness and smoothness.
  • 2 cloves garlic, minced – For a fragrant, savory taste.
  • Salt and pepper, to taste – To season the sauce.
  • 2 tablespoons fresh parsley, chopped (optional) – For garnish.

For the Pasta:

  • 12 oz fettuccine pasta – The perfect base for this creamy dish.

Instructions

Step 1: Prepare the Chicken

  1. In a shallow bowl, combine the flour, garlic powder, onion powder, salt, and pepper.
  2. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.
  3. Dip each chicken breast first into the flour mixture, then into the egg, and finally coat it in the breadcrumbs.
  4. Heat olive oil in a large skillet over medium heat.
  5. Fry the chicken for 4-5 minutes per side, until golden brown and crispy. Remove from the skillet and set aside.

Step 2: Cook the Pasta

  1. While the chicken is cooking, bring a large pot of salted water to a boil.
  2. Cook the fettuccine pasta according to the package instructions, then drain and set aside.

Step 3: Make the Alfredo Sauce

  1. In a medium saucepan, melt the butter over medium heat.
  2. Add the minced garlic and cook for 1 minute, until fragrant.
  3. Add the heavy cream and bring to a simmer. Let it cook for 2-3 minutes, stirring occasionally.
  4. Stir in the Parmesan cheese, salt, and pepper, and cook for another 2-3 minutes until the sauce thickens.

Step 4: Assemble the Dish

  1. Slice the crispy chicken into strips.
  2. Add the cooked pasta to the Alfredo sauce and toss to coat.
  3. Place the chicken slices on top of the pasta.
  4. Garnish with fresh parsley and serve immediately.

Notes

  • Panko breadcrumbs work great for extra crunch.
  • Don’t overcook the chicken: Fry until crispy and golden, but ensure it stays juicy on the inside.
  • Make it extra cheesy: You can add more Parmesan or even a bit of mozzarella to the sauce for extra cheese pull!
